Chicory is a plant in the daisy family with pale blue flowers. Though it is commonly known as a roadside weed now, chicory has a history of use and cultivation that stretches back to Ancient Egypt. Its leaves are used as a salad green and roots are roasted and used as a coffee substitute or additive.
